The mini duck burgers at Wallingford's Tilth should come with a warning. Not the standard Washington Board of Health "eating undercooked meat may be bad for you" kind of warning -- which they do provide for a good reason: as ordered, the meat is rare enough to quack at you. No, the warning should let eaters know that once they've tasted one of these little sliders ($13 for two) they'll be ruined for all other burgers. Oh-so-deliciously seared and glistening ground duck meat is tucked into a pillowy brioche bun and topped with deep-purple onion relish and hot mustard that creeps up on you and sets your mouth just a little on fire. Consider yourself warned.
What do you crave? Which local restaurant makes the burgers that drive you to distraction? Post a comment below and tell us about it.
